charcoal vs wood fire

Folks,

I just want to start a discussion, what you perfer.

When we thinkin bout a Watersmoker or a Kettle, there is - in my opinion - only the way to heat it with charcoal, and add wood for the smoke flavor.

But in a pit, you can use a charcoal basket with added wood for flavor, or you can work with real burning wood fire in the firebox.

My feelin´is, that real wood burning fire adds more and better flavor to the meat than the charcoal way. But I wan´t to ask the experts.

What do you think ? Which way so you suggest ?

Well Simon, All I use is an offset smoker, no water and all wood for heat and flavor...so IMHO its the best way for me, but I do own a Weber Kettle, which I love to cook on, for around the house and for quick foods...steaks, burgers,etc..


I think they both have thier place in the bbq world, just depends which is prefferred, by the operator... :wink:

Or the design of the pit. It would be hard to used real wood exclusively in a kettle. It would be expensive to burn lump in a big offset. I use regular charcoal in the Weber products, lump charcoal in the ceramics and if I ever get my FatBoyz it'll be fired with pellets.

They all have a place depending on the type and style of smoker you are using. :D

I use charcoal to start my fire.... then it s all wood for me

I too start with charcoal in my offsets and then switch to all wood... Can produce some pretty good Q with charcoal and wood chunks in the UDS or WSM too.
