sirloin tip sammies

Well, smoked the sirloin tip . Took it to 130 degrees, foiled and let it set awhile. Sliced really thin, and used provolone and pepper jack cheese, with a little aus jus - pasta salad and brocolli/cheese. Turned out really good. I will do this again!
