Yes, lets! Good thing I wrap the keyboard in plastic before logging on. :D

All I can say is you *definitely* have the pics down! Everything looks absolutely delicious!

With a name like Diablo Chicken, I have to ask. Any details or recipe you could share with us?

Aloha DY,

When's da party????? :) Man dat is some serious food on the menu. The only thing to complete the meal is some steamed rice! But no sweat cause I heard that there is a purported shortage of rice and my Dr. had told me to ease up on rice.

I have a catering biz here cooking local (Hawaiian style) grub. I prepare Hawaiian, Filipino, Japanese, Korean, Portugese, and Chinese foods. I do Hawaiian style bbq (in the ground pit) and also spit roast whole hogs. My son and I did a hog at a tailgate party when the Seahawks played the Redskins during the play-offs.

I work out of my home and cook "on-site" wherever the party is. I am retired so I just freelance. I worked at a restaurant 25 years ago and that is too much work.

Boy you must have a huge smoker to do all the salmon. Is that seasoning you use available here in the NW? Like to try it cause I just use Hawaiian sea salt, brown sugar and some ginger for my salmon.

If all goes well this summer, I may do a hog roast. I'll invite you for sure.

a hui hou,
honu41
