Pecan Smoked Turkey Breast

Postby tex_toby » Fri Jan 26, 2024 10:14 am

I did something yesterday that I haven't done in a long time......I broke out my Gator Pit out of my shop and put it to work! I think it's been over a year since I last used it. At any rate, I pecan smoked a whole boneless/skinless turkey breast from H-E-B. I heavily seasoned with SuckleBusters 1836 as I wanted a really bold, coarse, peppery crust. Mrs Tex followed through with some turkey gravy, sautéed mushrooms and a side of broccoli. :D

Super easy. Right at 5 lbs. Only took about 2.5 hours. Pulled at 162. It was perfect!

None at all. I'm pretty sure these are pre-brined. Did not need an injection at all.

Looks pretty good TT. Like you I haven't fired mine up in quite some time as well. But its time to get it ready for cookoff here in Houston.

The Counselor hooked me up with a turkey breast deal that turns out much like yours. Makes for a nice meal and some sammies down the road.

You should be ready for some samller britches by late next week at this rate.

I like the size of these turkey breasts. But, the 18% solution weight annoys me. I hate paying for water. I just wish turkey breast was easier to obtain. HEB has the Honeysuckle split breasts sometimes, but they are much smaller in comparison

I did some of that type of cooking prior to retirement; we would load up and go to restaurant depo and buy them by the case which contains 2 breasts each about the size of a volleyball... maybe this will help you locate some? :dont:
