Smoke Rolling at the House Today

Postby tex_toby » Thu Aug 31, 2023 1:22 pm

My freezer was starting to get a little bare, so I fired up the smoker today to remedy that. 2 whole Choice Packer Briskets seasoned with Sucklebusters SPG, 6 racks of St Louis Spare Ribs treated with Hog Waller, 1 bone-in pork butt with Hog Waller and a stick of bologna also with Hog Waller.

First out of the smoke is the bologna.

Next, the ribs...

And finally, the briskets and pork butt

Thanks, y'all. I don't like to fire up that pit unless it's going to be loaded. All of it was for my freezer aside from one of the briskets. It was for my mom. I'll vacuum seal everything info meal portions and have easy dinners ready in no time. :D

That said, I'm tired of bbq'n for a while. :texas:

And conversely, I can’t wait to fire up. Had the big dog restored over a month ago or better and it’s been so hot outside I haven’t even attempted to fire it up

Do you eat that bologna cold or do you heat it back up.

Typically cold, but I've been known to fry it up for a little smo-fried action. :D
