Beef ribs. Best way to do them?
I picked up two slabs of them. Flat bones in case you were wondering. I thought typical SPG spritzing.

5 hrs in and it passed the toothpick test. No thermometer here so that's what I have to go by. Hope it's close.

Very rich, full body flavor but I didn't expect to be full after 1 though honestly I ate a second one.

Looks great, curious about the French onion soup, wife loves it but no meat in it here that we have had, maybe broth?
PB AustinLX, Weber Performer, Weber E310 , 250g trailer pit , 36" cowboy grill, bunch of other ways to burn food.

I had a total of eight singular ribs left. There is enough for the soup and it was super rich. Good flavor but not terribly filled with meat but enough.
