Late start but plenty of time. Beef naval cured 5 days in chipotle, guaillo , arbol and spices. Chicken brined in much the same mix. The reserved mix will get a dose of agave for a glaze. Down for a long visit in the dry sauna!
Yes those chicken legs are over a half pound each. Whole 10# bag only had 20 legs in it.

Thanks all. Legs were bigger than I’ve seen in a while. Naval was one of the RICHEST things I’ve had in some time. Had the 2 slices pictured and fridged the rest. Warming tomorrow for dinner, sides are to be determined.
