I tried my hand with shotgun shells tonight

In between calls today decided to try and make shotgun shells. Stuffing them was fine but wrapping the bacon and keeping them together was difficult. Not the best presentation I’ve done but they did taste good. Way more filling than I would have thought.

Manicotti boiled for 4 minutes
Mix of pork sausage and ground beef with fresh mozzarella in the center. Rolled in bbq sauce the. Wrapped in bacon. Bbq rub the smoked until bacon is crispy. Cheese on the end piece and bbq sauce added the last 15 minutes.

Leftover ground mix is going into a bacon wrapped meatloaf for me tomorrow at work. I can’t wait.
