I had my brisket in the coolor for7 hours wrapped in towels.
Usually I get between 4 to 5 hours and it's still hot enough. But, the extra couple of hours I had it resting, were not sufficient to keep it warm enough.
What's the best way to reheat it without taking out of the paper. Or, should I take it out of the paper?

Good morning! If reheating the same day as the cook, I’ll put in the oven at about 275 until it looks good to go. I reheat from frozen a lot because I tend to smoke way too many at a time. From a hard freeze, I reheat in the oven at 325 for about 2.5 hrs - doing the same with pork butt. I’m really beginning to think it tastes better that way - the flavors mature more so than eating fresh (but I’m not knocking that either!) I reheat in the same butcher paper I cooked in. Hope this helps!

Hello. I grill meat every weekend. This time there was a turkey. To continue the celebration of food, I save the ostkos in vacuum bags and heat them the next day in the microwave, but before that I put them in a special microwave dish, this is very important, learn more here . I want to draw your attention to the fact that reheated food is no worse.

If you put it in a 200°F oven, it shouldn't go past the internal temperature you pullet it out of the cooker and thus maintain texture. Of course you can adjust the oven temperature + or - up to 10°F to match or stay slightly below the IT you pulled it out of the smoker at.

Most ovens have a low of 170 ,
PB AustinLX, Weber Performer, Weber E310 , 250g trailer pit , 36" cowboy grill, bunch of other ways to burn food.

I just did a 20 hour hold on a brisket in a 170* oven.
I had never held one that long, but didn’t want to cool and reheat so soon.
It turned out pretty good.
