I do not cook on my offset nearly as much as I would like too but when I do I love it!!
I was asked by my neighbor to cook briskets for a party of 75 so I said sounds like a plan. :D
Fired up Little Mama this morning and started trimming out 4 nice IBP Choices. This one probably should have been graded prime as the marbling was amazing.

Got all four loaded up and using pecan and white oak today.

Looking great KAM. I know I’ve probably asked this before but what is your timeline for cooking a brisket using the pan method? Talking more for same day service than an overnight hold. Thanks for any insight.

These are averaging 15lb. Went on at 5:55 A.M. Two are done and resting at 11:00 A.M. / 12:00 P.M. Right at 6 hours cooking at 275°/325° The other two are sitting at 207° and 186° these were the two on the top rack. My target time for slicing is 3:30 P.M. So at 2:30 I will peel off the foil and let the bark tighten up.

Thanks KAM it does. Seems like most of the time we are eating at 5/6 o’clock so I was having a hard time determining how to incorporate the pan method with that. Rambos had great success with the overnight version from what I’ve seen, was just trying to figure out how to dial it in for a same day cook.
