Is it a brisket

Postby benguns » Fri Mar 19, 2021 6:59 am

Hello every one.
I’m from France (nobody is perfect) I bought a piece of meat, and my butcher tell it’s a brisket. I have some doubts about that.
What do you think ?

IDK, maybe a butcher will answer - but perhaps not.

What does the bottom look like?

Bon Jour!

Maybe but looks like the grain of what would be the flat on the right and what would be the toe on the left (?) roughly running in a similar direction- shouldn’t happen on a brisket. If I am seeing it right. Does look like 2 muscle sections separated by a fat layer (correct). Maybe they just mis cut the flat on the right and tapered a lot off.

Maybe it’s a sirloin section instead ?

Still, not a bad looking piece of meat. I’d cook it like a brisket and see what happens.

Looks like the brisket end of a beef navel. The 3 indents at the top of the pic look like rib bones, which you see on the navels. I’ve seen brisket advertised as “boneless brisket”. The navel also has two muscles. Pic attached.
