Texas Style Beef Ribs

Texas Style Beef Ribs
Picked up some boneless Texas style ribs from HEB. I know they are just chuck strips. Give me some ideas for cooking. Should I just KISS them with salt, pepper and some smoke? Let a brotha know.

If it's Country Style/Farmer's Cut you are speaking of then I cook them the way BBQ Pit Boys do on their site. I'll find the recipe for you and post it here.

This will work for beef ribs? That recipe looks like it is for pork.

OOPS - - - EXCUSE ME, I was mistaken and thought you meant the Pork
I wasn't expecting Beef Ribs when I saw Boneless - - - matter of fact I've never seen boneless Beef referred to as Boneless Ribs.
I am a huge fan and user of Suckle Busters Seasonings/Rubs/Spices and, if it were MOI, I would dust them with either their Texas Pecan, 1836 or any of their Brisket rubs and then Grill Away.

OP, with some exceptions meat is pretty much meat when barbequing. Most recipes for BBQ meats will transfer with minimal changes. The normal drill is to season, cook, and eat. Don't overthink things. BBQ isn't high style baking.
I did some of these recently on my then new pellet grill. I seasoned them real well with Cavender's Greek Seasoning and smoked them at about 180°F for an hour or so to get as much smoke flavor as I could and then cranked it up to 225° for much of the cook. I finally dropped them in a foil pan with some beef stock, woo sauce, and soy sauce and went up to 250°. Then cooked them to 200° plus internal and chowed down. Nicely flavorful and tender.

Well the time has come to cook these bad boys. Went with garlic salt, a garlic and onion blend, cumin, and ground and coarse black pepper.
Going on Portia with lump and pecan chunks.

First check and mop with water and soy sauce. HEB chicken and pablano sausage, and Johnsonville brats are along for the ride.
