I bit the bullet and ordered two new therms last week. I have had great luck with my InkBirds but they are starting to show their wear. I decided on the ThermoWorks Smoke which allows me to have some versatility in the two units both at home and competitions. The therms are really easy to operate and the alarms are super loud.
I needed to try at least one of them so I cooked up a Picnic seasoned with Sweet Texas Pecan and SPG.
Here is the picnic after pulling. I foil wrapped it at 170° and pulled it at 205°. Total cook time running the WSM at 300° to 350°and a dry pan was about 7 hours.
