First pastrami!

First pastrami!
Saw an old episode of Diners/Drive ins and Dives which showed a Pastrami food truck.
Guy raved about it so I looked up his recipe and gave it a go.
Finding all the spices turned out to be harder than I thought it would but Amazon was able to overcharge me for what HEB and Wally could not supply.
Soaked a packer in the brine for 8 days and smoked it on the Masterbuilt gravity feeder until internal temp hit 180, then into the oven in a pan with chicken stock added and tight wrapped in foil until 210.
Came out great, super spicy but not TOO spicy.
Next up is Alton Brown's corned beef!
Last pic is fresh out of the brine, next to last is with dry rub before smoking.

Wow! You crushed that. Fantastic looking pastrami and that sandwich plate is something I’d be happy to pay for in a restaurant.
Not sure what’s up with the cell phone pics going in reverse order. I’ve been trying to post from my phone straight to the website lately too instead of using the app. Benefit is I can post multiples at once and it’s pretty easy to do. Downside is it puts them in reverse order and sometimes sideways.
But it gives Parts something to do J/K Emm - we appreciate you buddy!

I prefer to use a camera but I wanted some quick pics to message to a family member and hauling out the camera takes some effort..so of course I went the least resistance method.

I love it! I had a fan problem but Masterbuilt is sending me a "fan kit" which includes a new fan and wire harness with door sensors (under warranty, which has just expired).
I had to bypass the door sensors to get the fan to run, but before the sensor failure I cooked on it probably 30 times and fell in love after the first hands off brisket.
Cook chamber temps stay rock steady and I stay in my LaZyBoy chair.
Also picked up their rotisserie module but I have to say I am more of a direct grill guy when it comes to yardbird.
