I used my BGE for the Christmas Rib Roast. The meat was one half of my $3.97/lb USDA Choice roast from another post. It's the first time doing a roast on the Egg and the fist use of the Cyber Q Cloud with the Egg. I loaded it with Fogo lump and a chunk each of mesquite and post oak. I cooked it about three hours at 225 before pulling it and getting the egg up to 500 degrees for the crust. I did learn the Cyber Q has an upper limit of 475 degrees before the thing starts beeping for going out of its range. 10 minutes of high heat gave it a nice crust. That egg did a pretty good job of getting up to that high temp and I liked not having to use the oven to finish it off.
I didn't probe it at the end, but it came out a perfect medium rare. I just don't think it gets better than this. The dog even enjoyed one of the bones (after I had chewed off a good bit of the meat because, well, it's a rib).

And you would be correct, Scott.
The roast looks perfect!
