Turkey day bbq idea

So I was going to play with a frozen Turkey. Idea was to cut out the breast sections from the body keep the rib bones on, brine it then smoke until close to done then finally grill the rest while mopping the skin side. Anyone see any issues with this. We dont eat the dark meat so I was going to use that for a soup base.

We just buy the Turkey breast. I used to mess with a whole bird but just to messy. Broth is cheap too

I’ll eat the dark but the ladies are a little picky. It’s the nicest way I can say it actually. That reminds me I need to buy a brisket this weekend Pastrami is in the works.

I read the title of the topic, I thought that you want to put a whole turkey on the grill. Your idea is good. Just before smoking, marinate the breast thoroughly in a liquid marinade so that it absorbs the liquid and does not dry out during cooking. Otherwise, you will get a crouton and it will not be tasty at all.
