Tried my hand at smoked pork belly this afternoon. Should have given myself a little more time to properly finish, but had to rush the end. Next time I’ll know. Definitely worth another try. It’ll eat....

Looks great. If you cube first then season and smoke, you will shave off some cooking time and increase the surface area for the greatness we call smoke to reach.

I love to cook pork belly, and one thing I've learned is patience. It's done when it's done.
I cube mine from the start now to get more seasoning and smoke over the pieces.

OUP, All of the above and a healthy dose of BBQ wisdom judgement call.
You can see when when most of the fat is rendered. The final determination is tasting.
I cube my pork belly from the start, so it's easier to sample for doneness.
