Beer Can Chicken

Beer Can Chicken
I did a beer can chicken on my pit boss pellet grill. Instead of beer I put apple juice in the can...the level of the juice did not go down at all after I pulled it from the grill. I thought that some of the liquid would have evaporated. I cooked at 350 for 2 hours.

That’s what you get for not using beer. No chicken wants to drink apple juice.

Ok maybe a stretch but was the neck hole covered with the skin flap?

Maybe apple juice just doesn't steam and evaporate? It was in there for 2 hours at 350 so O woukd think it would but the level of the juice in the can didn't go down one bit.

I read somewhere that beer can chicken is a bad thing.
I believe for one, the can keeps the heat from getting to the inside of the chicken, and two, you have the chicken contacting a printed can.
Probably not food grade ink.
We stopped using the can a long time ago, and just used the beer can chicken rack by itself.
Most of the time now we spatchcock the chicken.

So if you don't use the can for liquid what do you put in the rack if anything.

Nothing, just a stand to hold the chicken upright.
We just mix some poultry seasoning with soft butter and rub it "under" the skin on the breast.
That's it.

I just use a can about 2/3 full of tap water I ain't wasting beer on a chicken lol. Season the cavity put the bird on the can and stick an onion wedge in the neck cavity.
I rarely do them as it is mostly for chicken gumbo's never to eat as a meal. The water never goes down but does get extremely hot. This method used to be the rave but it has taken a backseat to spatchcocking the birds.

I had thought about the can’s printing in the past. But I’ve seen several restaurants that serve them. Last one I saw was using PBR. If the silk screening was an issue I don’t see the health department allowing them to sale or serve.

Health Department can't do anything about people using a product for other than it was originally intended.
i.e. Open can, drink beer, belch, throw can in recycle bin.

Honestly, no. There is really not enough surface area of the can exposed to enough heat to get the inside liquid to a boiling temp. Also, as the fat from the bird begins to drip down i side the can, this creates a sorta "lid" to the liquid inside, preventing any potential steam from escaping. I am working on a design that will bring new love to the beer can bird.. Stay tuned!!
