Sunday S&P brisket and ribs.

It has been a while since I cooked on my offset and I wanted a plain old butcher paper brisket and ribs.
15 lb. choice with 50/50 Kosher salt and 16 mesh black pepper.

On Little Mama with some white oak and Hickory.

Once the brisket was wrapped I added the ribs.

Ribs 3 hours in and ready for the butcher paper.

It was late when I finished and I forgot to snap pics of the ribs but they were spot on.
Here is the finished brisket.
