I'll go fat down if I'm spritzing. But.. I'll be 100% honest. Im not dead set on up or down, fat cap position depends largely upon the grade and content for me. This is a select, so the cap was up. This is also why I wanted to go fat down and spritz it.

This discussion will live forever; I think more go fat side up but I was mentored by a dayum good cook that was emphatic to always cook down so I’ve always done it that way. No need to change at this stage

Thanks all! She has been pulled and now resting. Slice pics soon enough! Took about 9 hours at 250 to hit probe tender. Cooked fat side up and I ended up buying another spray bottle so I could spritz anyway. Lol! Spritzed with a mix of beef broth, garlic, and Worcestershire sauce, (OUP's favorite :laughing7: ) and a touch of apple cider vinegar. Pellets were a mesquite, hickory, pecan blend (smells WONDERFUL). Think I'm definitely keeping some of those in the arsenal.

Oohh dear!! Turned out very good for a select. A touch dry on the far end of the flat but, otherwise pretty moist where it needed to be.

Looks awesome to me. Get ya one of those Amazn smoke tubes if you want more smoke. It will add smoke for about 6 hours.
