Well, it's my birthday. I just got in from work, so I thought I'd get my meal ready for this evening.
I had a 7 lb. chuck defrosted. I injected and rubbed, and plan to get it on the smoker about 6 AM (hope I wake up).
Also had 8 jalapenos, which I stuffed with mozerella and cream cheese, mixed with garlic and texmex spice. Rolled up in hot pork sausage to put on the smoker about 4 hours into the cook. Probably do a fatty along with it for a snack while the chuck finishes. Pull the chuck and make tacos and enchilladas, and maybe a sammie, if there's enough. Beer in the cooler, friends coming over and nice weather. Gonna be a good day!

Not far from you, bowhunter. Eating around 6 - Actually, this gives me an idea. On another forum I visit, they have get togethers. Might be something to consider for those of us who talk, and live within a certain geographic area. Pick a time and met, Q, and have a good time. Just a thought!

Armadillos eggs and fatty done. Letting them set for a bit to set back up before cutting. Chuck is in the cooler and ready to be pulled for the tacos, enchilladas and sammies. Just got a 30 pack for my b-day. gonna be busy.
