First shot at Beef Plate Ribs

I picked up some dinosaur bones a few weeks ago at Costco. I’ve never made them before, so in the freezer they went until I could do a little more research. I’ve been stuck inside for a few weeks, so yesterday was the day I thought I’d try my hand at them. I fired up the Gator Pit and off I went! I went ahead and tossed a brisket on too for good measure since I had the pit rolling and all. :D I seasoned both the ribs and the brisket with with Sucklebusters SPG & 1836 Rubs. I cooked these for about 8hrs between 250 - 275 until they reached 200deg and the probe slid in like butter. I was totally not expecting my brisket to be done in the same time, but it sure was! I’d say my first try at beef ribs was a success!! :coolnana:
