Chuck roast burnt ends

I’ve got three days to figure this out but will probably make it for Sunday for the family since I have to work Friday night. Any pointers? I figured to cut it in cubes and smoke until it gets close to 203.

My quick search will force me to use Sucklerbusters STG. Darn not again. Lol. Trying to figure out whether to cut into cubes before the process or 2/3s the way thru. I saw this one tonight.

I'd cube it in the very end, sauce it with your choice and back on the smoker for another 45 minutes to an hour to get it caramelized.

I like to use Apple Cider, Kentucky Apple Bourbon Whiskey,Molasses, and Brown Sugar .

I've always followed Malcolm Reeds recipe and it has turned out great each time. He cubes first. You get the rub and smoke on all 6 sides.

This is for pork belly. Can't see why it wouldn't work with chuck roast even it's not as fat as a pork belly

I think there is a better chance of the Chuck Roast drying out compared to the Pork Belly cubing it first. Either way CAP, they should turn out really well. Looking forward to seeing them finished.

I've only ever done this with brisket and always cubed at the end.

Curious to see how it turns out.

The weather was kicking my butt and have never experienced not getting up to temp before. It took twice as long but worth the wait.
