The Morning After

A couple of day's ago I picked up a couple of 12 1/2 pound packer brisket's and a rack of baby back's from H.E.B. to put on the pit yesterday and thinking the brisket's wouldn't be ready in time for dinner last night I got the rib's. For some reason I couldn't sleep that night so at 3:30am I was putting a fire in the pit and the brisket's went on at 4:am, I had seasoned them the evening before. Making a long story short, the brisket's got wrapped at around 1:pm, about the time the rib's went on and it all came off at 5:pm. I let the brisket's and rib's rest for about an hour and a half, and then sliced up half a brisket and the rib's for dinner. By the way, it all was smoked with post oak and mesquite around 225/250 degree's. This morning I sliced up the rest of the brisket and vacuumed packed it for the freezer and some of what I didn't vacuum pack will be made into chopped beef for the freezer. I didn't take any pic's of the cook, guess I just didn't think too.

I love using vacuum sealing because I can take a package out of the freezer and put it in boiling water to defrost it and heat it up. Also, it will retain its moisture, unlike heating in the oven.
