Just sent me a note. Lots of nice photos and says it really feels like Christmas as compared to Singapore, where he is currently working on a large project. Eating elk Carpaccio and next course is reindeer stew.

Golar is a LNG company.
Seems like he is having a great time. Not so much snow downtown. Got some warm temperatures the last few days that melted the snow downtown. If he get it to Holmenkollen ski jump arena he will get a spectacular view over the city and the fjord. If it's clear weather.
That meal looks great and tasty. I think it's moose he is eating. What you call elch is more like our deer. We call moose for Elg.
The first picture is moose.and the second is deer for us. When I visited Yellowstone in the summer they called the latter Elch.
Reindeer is among the best you can eat.

Dinner is finished and i feel the couch is just about right.
This ended up good, not great. The previous batch was better. Why:
Last batch was made at home with the WSM. In the wsm I use water in the water pan. Here at the cabin I used the uds type smoker I bought in the autumn. Have only used it once before. Last time I struggled with the temperatures. This time it was less wind and I used more briquettes. I skipped water in the water pan. I had a stable temperature of 270-275 which was great. Dropping the water made the meat less tender, some of them even a bit dried out on the edges. Next time I will have water in the pan. Temp problems was due to too little coal last time, I think.
The second thing is that last time i glazed with SB honey bbq glaze. It gave the meat a much better color and taste. The sauce I used now was a mustard-honey sauce. It was brown and gave the meat a darker and brownish color. Not as good looking as the SB sauce.
Served with twice baked potatoes and caramelized onions.
This wascm a return for Christmas. I will adjust the things mentioned above and do another run for my parents and my wifes parents the day before Christmas. They will all stay here with us at the cabin for the Christmas days.
