Pulled Beef

If you like pulled pork, you will love pulled beef.

Ingredients
Two chuck roast
1/2 of a large red onion
1 red bell pepper
6-8 garlic cloves
BBQ rub - I used Sucklebusters 1836
Cherry chunks for smoke
BBQ sauce - I used Sucklebusters Chipotle cut 50/50 with honey.

On the Egg at 300 until the chuck roast reaches 165.
Remove, place in pan with onions, add garlic cloves, cover with foil and back on the Egg.
Remove when the chuck roast probes like butter. I checked it when the roast reached 200 - wasn’t ready. Pulled an hour later.
Chopped the onions, bell pepper, and garlic. Added to the pulled beef.
Added more cherry chips and back on the Egg uncovered for more smoke along with some ABTs.

Added some bacon wrapped jalapeños stuffed with Philly cheese and mango. Pick shows the process.
