Ok I picked up a couple slabs of beef ribs. They kind of remind me of a combo of pot roast and traditional rib. The sauce I wrapped them with was a vinegar base. I guess I wish there was more meat. Felt more like a snack. Not
Bad just wondering if these are a shiner rub or a true beef rib??
What type of beef ribs are these?

^^ Yuppers. These are what's left when the ribeye has been trimmed away with the cap.

The liquid I added to the ribs in the wrapping was very good and they were super tender. I’d smoke more the next time.

They're good, for sure. Just not enough meat on them at all. When you look at cost, they're just as expensive as dino bones.
These are good for a couple people max. Lots of ways to cook em up too. Crockpot braising is a good method.

I’m laughing right now and you will know why when you see the thread I started before I read yours.
Those are what I call shiners. Bet they taste good, just takes several to get full.
