Smoked duck

Brined a duck overnight in 8 cups water, 1/2 cup kosher salt, and 1/2 teaspoon pink curing salt. Smoked at 250 with cherry for about 3-1/2 hours until the breast was 165. This was a real fatty. Making duck stock with the carcass. I see a duck and andouille gumbo this winter.

I have a few ducks with my brood of chickens. I suggested to the wife that we should do this with them. She disapproved.. :(
