Finally got the butts off the smoker about 3:30. Put in the cooler for about an hour and then pulled. Got the pastrami off and sliced for tomorrow. Ham is still on the smoker. Had PP tonight, with Carolina style slaw and baked beans. I am really happy with the pastrami - first time making it.

Bowhunter - no cure - took a corned beef - soaked for about 18 hours - changed water twice - patted dry - seasoned with pepper, corriander, garlic, onion and paprika - smoked to 185 and put in cooler for 1 hour. Refrigerated and sliced. Awsome stuff!

Food look great! Corned beef, turned pastrami is def. good eats! We do that around here from time to time and it's always a hit...
