Smoked Eggs - again
Smoked some deviled eggs today. Have smoked these with yolks in or out. I recommend yolk out - leaving yolk in dried it a bit. Simple recipe for yolk - the smoke is the feature here. Mayo, mustard, olive oil, and some Sucklebusters Hoochie Mama. Added a caper and sprinkle of paprika (I over sprinkled)

I used an A-maze-n tube and cold smoked the eggs for one hour. But it’s not necessary to cold smoke as you would smoke cheese - smoking the eggs along side of some pork or poultry would be fine.

Maybe be a dumb question but has anybody ever grilled eggs in the shell instead of boiling them? Not sure how it would work at all. Just curious.

I did it once a while ago. Not really any difference between baked and boiled. I would suggest if you try it to rotate the eggs as they cook. I had some burnt spots where the shell was resting on the grate the entire time.

Yeah I saw a guy on youtube who said 300 degrees for 35 minutes rotating about every ten minutes. Might give it a try next time I have the pit lit just for fun.
