The Great Ox Tail Experiment
It's a gorgeous spring day at the house of Piney, and it needs to spent in the smoke. I'm smoking and braising ox tails today, and trying something different from my usual ox tails.
A light rub with SuckleBusters SPG to get them started:
I put them on the pit for a couple of hours with some mesquite to get some smoke:
I let them rest with a dusting of Oakridge Carne Crosta while I got my BGE set to screaming hot for a short sear:
Into pans with a rich beef broth, and covered tightly to braise for a couple of more hours:
I'm looking for very tender, fall off the bone meat to serve over a bed of rice and beans. More pics to follow.
