Another spatchcock chicken on the WSM

Did another spatchcock chicken on the wsm today.

Brined it in salty brine for some hours. Sprinkled it with Sucklebusters Clucker dust. That is amazing on chicken.

Ran the wsm on full with no water in the pan. A chicken is done in an hour plus.

Didn't have more SB honey bbq sauce so basted with some bbq sauce i bought in the store. Wasn't the same, and it burnt faster. The skin got a little burnt on the thighs and didn't look as nice as my previous attempt. The meat was moist and tender.

The chicken I use is a slow growing chicken that is ecologically fed and has a much better life than the industrial stuff. More space, outdoor access and normal daylight etc. This live for 60-70 days instead of 30. Gives a much better meat and taste.

Thanks folks. Clucker dust is great. Never smoked a whole chicken before I got the WSM. Only grilled it. Smoking on the WSM will from now on be my preferred way.

That's one fine bird right there. My wife goes nuts for crispy/burnt chicken skin. I love it too. I did 2 birds about a week ago and tried something new. I poured zesty Italian dressing through a fine mesh strainer and injected the breasts with the strained dressing. Then I rubbed the strained solids under the skin on the breasts. The wife said it was the best most moist tchicken I have ever made. The breast meat tasted a little to italiany for me but it wasn't bad. Can't wait to do them again.

Good looking bird. I'm a little sceptical about the Italian dressing. Have used it on chicken before and wasn't too happy with the taste it put on the meat.

I exactly what you are saying. I have used it for years on thighs and wings an love it but I'm not wild about it on breasts.
