Al pastor pork butt!!
This went on the pit earlier. Marinated about 18 hours in my own al pastor blend. Smell is TERRIFIC! Coasting now at 250 and holding. I've got a special dish in mind for this.. Stay tuned.

So 6 and a half hours at an average 275 deg, it was done.. Please don't mind that chunk that MYSTERIOUSLY just disappeared..
I made some Arepas next.. This is a special maize flour that is pre-cooked. Very simple recipe for these: water, masarepa, and salt. Mix to form a dough ball, let rest 5 min, form into patties roughly 1/2" thick.
Took the pork butt and chopped then mixed with the remaining al pastor marinade and placed into these awesome little corn cakes..
They turned out alright. Will need a bit of finesse to get them right. The flavor of the pork was PHENOMENAL! I will make these again before too long..

Usually a large cut will last about 3-4 days worth of meals but, this was demolished by dinner the next night. Lol!
