Gonna do my first pork butt this weekend

In all my cooking I have never cooked one. It weighs 9.3 lbs and is boneless. How long should it take and what temperature would be best. What temp should I be looking for when done? :dont:

I always get the bone-in butts and pull them when the bone pulls free with little effort. As with most things you're gonna be better off judging by feel rather than temp. Here is a little primer from one of the best....

Like many other meats.... Your temp until it probes tender. For some reason, mine are perfect at 203* nearly every time but I still probe them. I like to wrap in foil to collect the juices. De-fat them and pour over pulled/shredded meat. Good stuff - this won't be your last.

I smoke mine at 250-275 until an internal temp of 205. Only let rest for for as long as it takes me to get my claws out and a pan to shred it in.

Good luck with it. My general rule-of-thumb is that it seems to take 1 to 1 1/4 hrs per pound, but I do all my butts on my bullet smoker with applewood, cherry or hickory.

I also get only the bone-in, and I've been smoking nothing but picnics for the last 3 yrs or so. Excellent results. I butcher the top skin off sometimes and give it to the neighbor lady...she dries it and makes cracklin' cornbread with it and gives me some 8) . Prep all over with wooster and then the rub.

I smoke it to 160 internal, then give it a very light spray with liquid (recently experimented with Pepsi Wild Cherry-good results) and double wrap in HD foil and put it back on until it hits 205. Then let it repose in sweat box for at least an hour, then do the pulling. Then give it away to my 'list'. :dont:

Did you get the boneless butt from Costco? You probably have two in the package... So that will affect cooking time. If one is 5lbs and one is 4, you are looking at about 6-7 hours cooking time (at 275-300°), shooting for that 200°-205° range. Butt's are pretty forgiving... I have bought boneless before (by accident) and ended up using butchers twine to tie it up into a nice blocky shape to resemble a bone-in...

Upon further inspection it does have a bone in it. It is just one also. I can tell now that it is thawed
