I like to wrap mine at 150/60 or so and pull between 200-205 and let rest for at least and hour. I've even rested for double that time if the willpower permits.

Just wrapped it at 171. Never got any dark bark. Hope it tastes good.

Well durn it. Should I take it out of the wrap? It is at 195? Too late to unwrap now..... I'll know next time. I'll pull it at 203. It already probes tender. All we can hope for now is taste

Yep about to go unwrap it. It's been resting about 1 1/2 hours.

Well here are the results. I learned some things today of what to do and not to do on my pellet pooper.. I'll get better at pork butts. It was delicious even though the bark was not what I wanted. The bone pulled right out clean. I sauced it up with what I had on hand... Head Country after the picture.
