Ribeye on the WSM

Fired up the WSM again today. Wanted to try a ribeye low and slow.

Fired it up with Weber briquettes and throwed in a chunk of oak from a used aquavit barrel.

Seasoned the ribeye with EVOO, Sb campfire and some SPG.

Set the WSM to 221. Pulled the steak at 138. That makes them medium rare. Then I lifted the middle section of the WSM of and place the grate on top of the charcoal basket for searing. That works very well.

We had the usual broccoli dish, twice baked potatoes and homemade Bearnaise sauce.

A glass or two of a French Cotes du Rhone with dinner.

The whole thing turned out great.

Very windy today but the WSM was rock steady.ImageImageImageImageImageImageImage

that is a great looking meal :cheers:
most of the time I cook steak as hot as I can, it helps put the crust on the out sides and depending on the cook time can leave the insides still pink.

That is what I normally do too. I feel with a ribeye this was great. Low and slow melted all the fat away and then a reverse sear. Would use hot and fast with a sirloin or tenderloin. For ribeye I will stick to this I think.

That is a cool name, but that wine is from south Africa. They too make a lot of great wines.

I'm sure you can get a Cotes du Rhone wine in the US.
