WSM - Bird success

Despite the weather I fired up the WSM today. This was the second time I cook on the WSM. I was a bit disappointed with the short ribs I did on it the first time so I went for a spatchcock chicken.

Brined the chicken in a salty brine where I added some chopped garlic, pepper and basil.

After brining I patted the bird dry and seasoned it with SB Clucker dust.

Fired up the wsm with briquettes and three chunks of applewood. No water in the pan and all vents fully open. Smoked the bird for 45 min, then brushed on SB honey bbq sauce. After 15 min. I took the lower grate and placed on top of the bird, flipped it around, removed the center section of the wsm and placed the grate now with the bird skin side down on the charcoal ring fire a couple of minutes. It crisped the skin.

Turned out very moist and with a nice bbq taste. This was the best bird I've ever made.

Served with potato wedges and a salad

good looking bird, I prefer the spatchcock to the two halves, but no matter either way to me, it seems to me that a spatchcock bird cooks slightly quicker.. :dont:

At first when I removed it from the heat I thought it was burned, but it wasn't. It tasted perfect imo. The honey bbq sauce is really great. I am running soon running out of the sauce so must soon order more.

Burned? Oh no. Even in pictures, I can spot the differences in charring and caramelization. :D

I would think that the Spatchcock method would hold moisture better than 2 halves. It also leaves less meat exposed to the heat. :tup: :dont:

I personally like the half’s, I think they cook a little quicker. Actually prefer cooking chicken leg quarters over the half’s.

Thanks a lot, folks. I was very happy with the result. First time spatchcock and first time a bird on the wsm.

I may be wrong but it seems to me that the wsm is somewhat forgiving. This time I pretty much let it burn as hot as it gets with no water and still not burning the food.
