looks outstanding, Rich!
Since I've been at the restaurant, I've sold more spares than anyone I think. The number one question I get, is what is the diff between spares and baby backs. I always say alot more meat and flavor with spares! Surprisingly, more men ask me that question than women! :shock: Everyone of my customers who try spares for the first time love them and clean every bone!

Those do look good! How did you decide to vac seal and reheat? Did you end up cutting them, or leaving them whole?

Cut them in half, vac sealed. Had a bunch of gallon bags, worked out real good. I will pass on the tips everyone gave about re-heating.
