Snow Bird For Dinner

I have a blanket of snow from last night and it was time to smoke meat today. :D

I spatchcocked an 8 pound roaster. I slathered it with bacon grease and it's rubbed it with SB Mesquite on the inside, and SB SPG over the skin. I went pretty light on the smoke, so this bird didn't pick up a lot of color.

Cooked at 325 on the Assassin with a couple of chunks of pecan for smoke.

Pulled at 170 breast temperature with the thighs reading around 195.

While this was smoking, I grilled some asparagus on the Egg

My wife is in charge of spuds and not set yet, so plated pics will follow.

Fun day, so far. :D

O Yeah!! light on the smoke most of the female folks like it that way, at least around my house...
