I can not wait anymore.I have no reason,but I am firing up the smoker right now & am going to pull an all nighter. I am cooking an 11 1/2 pound brisket & a slab of beef ribs.I will be posting all night so check back.Here is my little smoker.I am using Big Johns Hickory.That is Cody guarding the wood & smoker.

Where did you get the firewood Did you drive out to Big Johns or somewhere else?

I sent them an email the other days with a question, but havent heard back from them.

Gee wiz... If your cooking a brisket, I will probably be off work by the time it's done. I will drive by and check on it on my way home! :lol:

It's 1am & we are rocking right along.I have keep it at 210 to 225.I have the fire box facing right into the wind.Do guys at competions set their smokers into the wind? What happens when the wind changes?

I've got a vertical smoker - so there is no "into the wind" thing for me. But it looks like a good one. I was just commenting to a friend yesterday that I needed to do a good brisket soon.

Well Kalrog,I did not have a reason to cook one,I just have been dreaming about it since I joined the forum the other day.The other night I woke up & jumped out of bed thinking I had to put another log in the box! Nothing but good people here so far.I was just thinking about making an oldgreenbean shirt so Ya'll will know me at a cook off.
