Brisket Time

Smoked a brisket this weekend on my new offset and turned out fantastic. 12lb prime.

I appreciate the welcome. Just got in a Texas original 20" offset. So after a slab of ribs on Friday, this bad boy went on Saturday. Used a mix of Hickory and Mesquite....about 70/30 mix. Cooked it right between 250-265. For a 12 lb brisket, I was surprised how fast this thing cooked. Put it on at 10:30am and pulled it off at 4:30pm, let it rest 2.5 hours and it was great. Still really puzzled by the cook time with those temps though.

That's the funny thing about briskets. They're done, when they're done. Sometimes longer cooks, sometimes not as long cooks.
