True, but you probably overcooked them, so not a fair fight... But I do hope those unwrapped bones come out good.... I am curious myself. I don't wrap beef ribs, but just about everything else...

Funny thing about yesterday's batch is after they cooled down they tightened up quite a bit.
Now there's a tug but but not much of one.
I guess I should stop slicing and sampling right off the fire..

Okay all done..4.5 hours at 250.
I was afraid they might need to go a little longer but I figured I could always poke them in the oven if they needed more whereas its hard to un-cook overcooked meat.
I cut one out while still hot for the test and bingo, nice tug but super moist and tender.
From now on I'm going to skip wrapping that's for sure.

At 3/1.5/1 the ribs were in the smoke 5-1/2 hours.

I don’t wrap and my BB’s take about 6 hours at 240 but I don’t cook to time. I start checking with the bend test just after 5 hours.

Bend test - ribs bend close to 90 degrees when ribs are picked up with tongs are about halfway down the rack. Reminder: it’s a law in Texas to double click the tongs each time you pick them up. :D

If you foil, you are done in the 4 hour range.

No foil zone here. Set it and forget it at 240. Finish time is predictable at 5-1/2 to 6 hours.
