I had about a 4-5 lb loin left from the chops we ate a few days ago and decided to marinate it in a Caribbean jerk wet rub, inject it and mop with a similar flavor sauce. The fam really liked it. The coleslaw was not as big of a winner for them. The smoke ring was a little odd wide and not as condensed as I’ve had. I wonder it is had anything to do with the mopping liquid. I did experience a little heat stall too on the pork. It stalled for about an hour at 120-124 then it shot up to 150 in under 20 minutes. Could the injected meat cause this??

First time making pickled red onions and they are tasty. The misses ate the meat at multiple meals thus far so that’s a good thing.
