Playoff Brisket

Well since both Texas teams are in the playoffs, decided to throw a wagyu on the smoker. This is the third time I’ve cooked a wagyu and gotta say the marbling on this one is the best out of all the previous. Hopefully I don’t screw it up.

One thing I've learned when it comes to Briskets. Since Every One one of us on here, Everyone I repeat has had a brisket turn out sub par at least once or even more times is that I've found that I Never worry anymore about " ruining " them.
I know its an $$$ piece of meat and takes a lot of work and time, but I think we might put more pressure on us than we need. Grab a few beers and enjoy the process dude, all will be ok .

Besides, for the ones that I've done that were just so so and not great, they went into Chili or into the slow cooker with a good Sketti Sauce for a few hours and makes for a great sauce over Pasta.
Brisket sliders work well too.

That marbling looks good for sure,I wouldn't trim too much fat off of the cap tho but that's just me.
Let us know when its all finished, I bet it comes out great !

WV said it best a bad brisket is almost always salvageable to be used for some other purpose.
I have only had one in my life that was not salvageable and if I had been paying better attention on the cook it would not have gotten turned in to a burnt offering of biblical proportion... that one looks like a good start looking forward to the cooked pictures...

Woohoo!! Score! Good job on the Antelope. And by that, I'm referring to bagging one (if you did). I've always been too far out in some iffy wind conditions to get one. Well.. I've only had 2 attempts but.. lol. Closest I've been able to stalk was 200 or so yards out before they got weary of my presence. Only had a puny little .243 at that time, not worth the risk.

I’ve been lucky to take one the past 2 years. Been making a trip to Oklahoma to hunt them. I bow hunt only and it is the most challenging hunts I’ve ever been on. All spot and stalk in prairie grass and choya cactus.
