Sorry guys, we've got company. It was off the charts. Many thanks to TXDragon; I followed his advice and it was, well, look at that one bite picture. No blood but like butter. I'll be able to talk about 10:30 or 11.

Beautifully done, sir! And look at that glisten!! Venison is a tough cookie to crack from being so low on fat content, and back strap is even harder. Like lamb, there is a small window that closes VERY fast between done and dangit!

Sorry Guys, the Grandkids and their kids didn't leave until 11;30 and then my favorite Little Buddy, he's 3, has a Melt Down that he is going to stay with his Gran & Poppy. They live about 20 miles from us so this is a serious decision PLUS, he's never spent the night anywhere without his Mamma & Daddy.
Here's a few more pics, I was surprised by the tenderness, it was almost like biting into a muffin. I also couldn't believe I threw a smoke ring on it, Go Home Grown Hickory .
Followed TXDragon's instructions; took it to 139/140 and yanked it, rolled it in pink Butcher paper and let it rest. The poppers were great( more to come on that) and those chicken quarters were great. I used SPG on the Tenderloin and Hog Waller/ Red Paprika on the chicken.
My Buddy's still in bed with Gran but later today i'm going to put up an ABT thread and show you some pepper Cutting/Stuffing ideas I think you'll like. It was just one of those things that came to my mind while I was struggling and I'll be doggone if it didn't work

Thank you, it was worth it. The Adult Grandkids were absolutely losing it. I may have enough left for one plate at lunch.

Honestly, I was hoping I got the temp right. I go by feel alone and this is a LOT harder to describe than a temp. Fortunately, I remembered the basics. Lol!
