Salmon for Cold Smoking

Postby Smoking Piney » Sat Dec 29, 2018 11:54 am

I Gravlax cured (salt, sugar, toasted caraway and fennel seeds, dill, and vodka) a salmon filet for 5 days. I took it out this morning and it's looking and tasting good. :D

It's going to get a couple hours of alder cold smoke tomorrow morning. :D

Gravlax is great. Yours looks excellent. One of my favorite salmon dishes, together with smoked salmon. We usually eat it with dill/ mustard sauce and stewed potatoes

Thanks, Joernolav. :D

I make gravlax every winter a few times and I LOVE it, but I've been curious about cold smoking it.

I'm going to give the tail end of the filet a kiss of smoke to see how it turns out.

Never tasted a smoked gravlax but it sounds exciting. Please post the result and how it tastes.

Looks great. I also like as is or with cold smoke.

I have a friend that will run in my driveway on two wheels for some salmon dip I make.

Fine chopped red onion (just a little)
Philly cheese
Capers
Chopped boiled egg
Smoked gravlax
Fresh cracked black pepper

Mix all together and have some plain crackers on hand

That's something I'd love to try! I love smoked salmon. My wife thinks it's raw, but I try and tell her it's not raw, it's cured. But she wouldn't eat it raw or smoked, but I would!

Cold smoke results......just OK.

I find the straight gravlax cure more tasty and rich.
