Country Style Ribs

I was looking for a quick smoke project today since I'm home alone this afternoon. The CSRs spoke to me when I was in the store this morning.

They're shoulder cut CSRs, rubbed with a base rub of SuckleBuster's SPG, and a finish rub of Myron's Basic Meat Rub.

Since it's raining here, I went with the BGE to keep things simple - indirect with pecan chunks for smoke.

After an hour of smoke:

In a bath of BBQ sauce mixed with apple and pineapple juice to braise covered until done:

I'm going to give then an hour and change, looking for about 195 on them for finish. While they're braising, I'm firing up my kettle for direct heat. My plan is to pull the meat from the pans, sear it lightly on the Weber, and back on the Egg for more sauce, with about 5 minutes to set the sauce.

And they're done........

The braise in juice / BBQ sauce really anchored the flavor on these.

I am not a fan of CSR's but I'd darn sure eat that!

I seared them just a bit on the Weber after I pulled them from the pan. The sear added some good flavor. I'll do these again. :D
