Grilled Chicken

Postby spacetrucker » Sat Dec 08, 2018 1:03 pm

the store had split bone in chicken breasts for $1 per pound.
So into the brine for 5 hours (3/4 cup of salt to 3/4 gallon of water) and back in the fridge...
then on the kettle for 45 minutes and the money shot follows...

 :salut:  Good to see some Chest Meat being grilled and photographed for a change. They are my second favorite cut of Cllucker right after Wings and the split bone ins are the only ones that I will buy and they are getting harder and harder to find lately. :dont:

the "scraps" make great chicken enchiladas & chicken salad I keep looking at brisket but the prices are just to high so we shop the more affordable meats and this week chicken is the deal....

Ain't that the truth?! I buy them because they're cheaper than the boneless/skinless and easy enough to process to make them such.

I had great results from a chicken experiment I did the other night. I butterflies 3 boneless skinless breasts and marinated them for about 3 hours in a vegetable oil and lavenders mix. Then threw them on a super hot grill and cooked them quick. I was well pleased with the flavor I got. I had a couple of small pieces of post oak in the fire too.

I have a tenderizer attachment for the grinder, at times when conditions are right, we buy the bone in, trim the meat off the bone, tenderize it and then in the deep freeze, and the bones; well they make the best chicken noodle soup with onions carrots and noodles.... great for a cold day!
