Beef tongue
Has anyone smoked a beef tongue. I want to try it and see how it works.

I’ve eaten it on tacos but never cooked it. Wasn’t crazy about the texture

Speaking of beef tongue, here in Virginia Beach they look at us like we’re crazy when we ask for beef cheek to make barbacoa. One of the many reasons to miss Texas I guess. But the same goes for me. I get my barbacoa sans tongue, texture. Let me know how it turns out tho.

Give it about 2 hours of smoke, then foil it and let it ride for about 8-10 hours at 250-300.

I've done it that way, works great and the smoke adds some nice flavor, also if you mix the tongue and cheek it makes for some pretty good tacos and not to oily but tongue alone is too dry for me.

We used to get lambs tongues in a brine cooked and tinned. It was beautiful in a sammy. They are all exported now to Arab countries.

Normally slow cooked in a roaster or crock pot with a little beef broth and onion. Never ever had one come out dry.
Also never thought of putting one on the grill. Maybe started with smoke then finish wrapped in foil with broth.

I have a bad memory of beef tongue.
My parents used to have a boiled one in the fridge. They took it out every breakfast. Sliced a few slices to have on a slice of bread.
I remember as a kid that everytime I opened the fridge that thing lay there, which I didn't find very nice. It probably tastes good but I can't eat it today.

Never cooked it but a taco stand I visit sells lingua. I love it.

I've done several on my vertical offset, with a water pan. Smoked 2.5-3 hrs 225-250*. Refilled the water pan and placed the lengua in to boil another 2.5-4 hrs. Once the skin was ready to be pulled, removed from smoker and let stand until it was cool enough to handle. Slice or dice but surely enjoy.

My mom has a great sweet n savory beef tongue recipe, it's my favorite dish of hers. She makes it every time I come over.
Can't have beef tongue at home. My wife and kids are not fans.
