Turkey Temp and Time
I'm cooking a Turkey tomorrow in my smoker. I would like to stuff it, but I think its better not to. What temp is best and how long per pound, Thanks for the help in advance. Have a Great Thanksgiving guys!

Spatchcock and 375 for around an hour and a half for a turkey in the 15-20 pound range. Breast at 165 and thighs at 175-180 is our preference.

325 until it reaches whatever internal temp you decide you want. (Some like it more rare than others).
You can boost temp to 425 for a few minutes at the end to try and crisp the skin but that's too fancy for me.
For a bagged 12lb bird, around 2.5 hours at 325 followed by 45 minutes uncovered at 425 is about right.
Start with a room temp bird and no stuffing of course.

I cook mine in my 22"OldSmokey
2-sided indirect in the mid 300°s
it is never about time
it is only about internal temperature
165° for the breast meat
& 175° for the thighs
like a brisket- it ain't done til it's done
..but a mid sized turkey cooks in around 3 hours in the mid 300°s

I like to cook the stuffing on the side and spatchcock the turkey to go hot and fast.
Spatchcock cooks faster and more evenly. I go 325 with the legs at the hot end of the cooker, and pull when the breast reads 165 and the thighs 180 or better. A 15 pound bird takes about 2.5 hours.

5 hours, on the dot, 300 degrees with kingsford and mesquite.
